Breakfast sandwiches two ways!

Get your day started with a breakfast sandwich done your way!  

INGREDIENTS:
3 eggs (separated)
2 english muffins
2 pieces of bacon
2 tbsp of vinegar

Avocado spread: mash half an avocado, mix in salt & pepper, garlic seasoning and red pepper flakes (I add about 1/4 tsp of each, you can do more or less depending on personal preference) 

HOW TO:
Cook bacon in a skillet, once finished place on a paper towel
Option A: Prepare your poached egg(s) - click the button below to see how! 
Option B: Cook egg(s) over-easy or over-medium in the bacon grease

Toast the english muffins and add as much avocado spread as you prefer
Option A: Place a poached egg on the muffin and crumble bacon on top
Option B: 
Place a fried egg and bacon on the muffin

Now you have two breakfast sandwiches, equally delicious!

Side note: some days I will omit the avocado and just do a fried egg, bacon, and a slice of pepperjack cheese! Change this recipe up however you like.  This is my take on a classic breakfast sandwich!
