Jake made a delicious Mediterranean bowl. Simple ingredients, one-pan recipe, and vibrant flavors! I am proud!
3 chicken breast
2/3 cups chopped roasted red peppers
2 tsps Italian seasoning (divided)
4 tablespoons olive oil
1 tbsp of minced garlic
1/2 tsp of salt
1/4 tsp of black pepper
1 cup heavy cream
Crumbled feta cheese
1 can of chickpeas (drained)
Handful of spinach
In a bowl combine roasted red peppers, 1 tsp of Italian seasoning, olive oil, garlic, salt, and pepper
in a food processor and pulse until smooth.
Season chicken with 1 tsp of Italian seasoning
Cook chicken in a greased skillet over medium heat for 6-8 minutes on each side until cooked
Transfer to a plate and cut the chicken into bite sizes pieces and cover to keep warm
Add the red pepper mixture to the pan and stir over medium heat 2-3 minutes until hot
Add heavy cream and stir until mixture is thick and creamy
Add chicken, a handful of spinach, and chick peas and toss in the sauce
Cover and simmer until spinach is wilted
Top your bowl with feta cheese!
Side note: we like to top our mediterranean bowls with garam masala seasoning for that extra kick!
