Mexican zucchini bowls...yes please!
I can eat Mexican inspired food every day so I decided to incorporate some veggies into my Mexican food diet! And it was genius!
1.5 lbs of ground beef
2 zucchinis cut into quarters
2 cloves of garlic minced
1 can of rotel
1 tbsp of chili powder
1 tsp of ground cumin
1 tsp of salt
1/2 tsp of black pepper
1/2 tsp of onion powder
1/4 tsp of crushed red pepper flakes
Cook the ground beef with minced garlic, salt, and pepper
Once the beef is cooked add the rotel and remaining spices
Cover and simmer on low heat for 10 minutes
Add the zucchini and cover and cook for another 10 mins until zucchini is cooked
Top with cotija cheese, cilantro, and hot sauce!
